Indulge in this melt-in-the-mouth vegan flan recipe. 

In this episode of EATKINDLY With Me, Amanda Castillo chooses a staple food from her growing up family: her mother's flan-only this recipe has a vegetarian flavor. 

You can even make this vegan dessert for Cinco de Mayo. “Contrary to popular belief, Cinco de Mayo is not Mexico’s Independence Day,” Castillo explained. "Cinco de Mayo commemorates Mexico's victory over the French at the Battle of Puebla on May 5, 1862."

She continued: "The entire battle did not win the entire war with France. But it did boost morale when it was needed most and became a symbolic victory for the Mexican government."

Castillo went on to explain that the reason this battle was so special was that the French surpassed the Mexicans by three to one. The French were also better equipped and were considered to be one of the most powerful troops at the time. "However, Mexico has won," she said.

She added that there are some important things to remember when celebrating Cinco de Mayo, especially if you are not Mexican. "Acknowledge the history behind the holidays and support authentic Mexican restaurants and businesses," she said.

Flan is the iconic dessert of Mexico. However, Castillo explained that it is not easy to make her mother's homemade flan recipe a vegetarian. 

"This is mainly because the flan is mainly eggs and dairy products," she said. Her mother’s recipe includes two dairy products: evaporated milk and condensed milk. Castillo replaced these with sweetened oat milk for extra creaminess and coconut milk to increase firmness. She also uses agar powder, a vegan gelatin substitute. "By using it, it will ensure that our flan is set up correctly," she explained.

To make this vegan flan recipe, you will also need two ramekins and a small glass bowl.
